I am a novice cook with a love for bbq cooking in competition. It’s so much fun to incorporate Japanese knives other than traditional Western knives. I have become enthusiastic about some of the artisans and Santoshi from the Sakai region is one of them. His diversity in different metals is outstanding. This Bunka is nothing fancy but is truly a wonderful knife to add to my collection.
I was very impressed with the fit and finish of this knife, it is a definite piece of art. Initially I was worried about the steel being a stainless you usually loose some of the easy sharpening qualities of carbon steels but the knife is easy to sharpen and holds an edge easily as well as blue#2 . If you're on the fence go ahead and purchase, you won't be disappointed.

I’ve used wood, plastic and other cutting boards but the Hasegawa board is the highest quality board I’ve ever used. There is a noticeable difference while cutting on this board. 10/10 would recommend to any home cook looking to upgrade their kitchen.
This kinfe is very sharp after sharpening. When I filleting medium size fish and I feel nothing so easy for everything, thank berrfection store and tojiro..

This is truly a beautiful knife. It is very well crafted, razor sharp out of the box and well balanced. Also, the Burfection team was wonderful. I had concerns about any gap where the blade meets the handle and they hand selected my knife to be one with zero gap. (This gap is not a flaw just my preference). They shipped the knife out to me very quickly and even sent me a picture of the actual knife they found for me. Bravo!
If you have never tried an artisan Japanese knife before you are missing out on a knife that can be superior to most production knives on the market.
Kazuomi Yamamoto is so far my favorite craftsman. The knife if beautifully finished, insanely sharp and has a very nice profile for push cutting. Bunka's have become my preferred chef knife as it blends the height in the heel for a comfortable pinch grip while having a flatter kiritsuke style profile for fine work. If Yamamoto san makes a Deba, I'd buy it! Hint hint.
I have more than 15 high end knives in my lineup such as Kato, Shibata Kotetsu, Miyabi, Shun etc... and this knife is easily in the top 3!

I cut sushi rolls and sashimi and did some neta cuts for nigiri. I normally use my Yanagi for these tasks, this knife worked really well for all task. Very versatile

I used this in conjunction with the polishing cloths available on this website. I have a cheap Yanagi that's been losing its shine and developed some spots. Running the polish and cloth through the meat of the knife restored the shine almost right away. This small tub should last me forever if I'm only polishing a few knives once every other year.
For the price, this knife is absolutely unbeatable. Extremely solid build, and ridiculously sharp. The sharpness compensates for the lightness of the knife and you can cut straight through anything. I have other knives in rotation, so I'll have to see how well the knife holds.
I've been using a random strop I bought from Amazon with decent results. This strop is definitely a step up when bringing back a razor sharp edge. One thing about this strop is that it's so good that it's also less forgiving if you're sloppy with your knife. It'll actually make your edge worse if you're not careful. But when done right, it gives you a beautiful edge.
I bought this knife because I wanted an Anmon style knife that was not too long, not too short so there was a good display of that unique forging pattern. Now that I have it, I'm very pleased with the balance and weight, preferring lighter and nimble blades. I recommend Nigara
