Our inauguration "Hatsukou series" features hand-forged in Tosa Japan with Aogami #2 steel hardened to an impressive 62-63 HRC. This knife delivers the authentic experience of traditional Japanese bladesmithing at an incredibly accessible price point. With its rustic charm and reliable performance, it offers excellent value for those seeking their first hand-forged Japanese knife at amazingly affordable price. The center of balance, positioned above the choil and in front of the handle, provides comfortable control for pinch grip users. Each knife comes ready to use with satisfactory sharpness right out of the box. Despite the unbelievably affordable price, the knife comes with excellent grind and geometry, superb heat treatment and very adequate fit & finish that is rarely seen at this price range. Although you should not expect finishing level that matches a knife 5 times the cost, we are confident that the finishing level of this knife will exceed your expectation for a hand-forged knife at this price point. Paired with a very stylish and classic ebony wood wa-handles.

Care:

Aogami #2 (Blue #2) steel is a premium Japanese high carbon steel for knife making. It is not stainless, therefore you must wipe your knife dry after each use, in particular the core steel not covered by the stainless cladding. Patina will develop over time, which will appear as “discoloration” on the cutting edge, but that is the nature of carbon steel - not a defect. Avoid cutting into bones, frozen foods, hard fruit pits.

Cutting Surface:

Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.

Sharpening:

We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives.

Great Deal IF you don’t mind imperfections

OK I got in on the $100 deal for this knife. Overall I am satisfied with this knife - it is a great knife. However, there were a lot of areas that had rough grinding marks still on the bevel that took about an hour to sand out. The knife did not come with the best sharpened blade, but once I resharpened the blade it was able to hold a very sharp blade.
This is a good knife that is worth the price and I would buy it again without hesitation. I know these are hand made so I don’t expect them to be perfect. However, there were just too many blemishes to give it 5 stars.

EXCELLENT KNIFE FOR THE PRICE!

I bought the Naru “Hatsukou Series” Aogami #2 Kurouchi 165mm Bunka based on reviews of other buyers and I admit the knife is an amazing piece of art. Extremely sharp and functional in the kitchen even for a home chef. Above all I am buying a hand made forged knife by a Japanese bladesman who transferred the knowledge of generations delivered at your home for less money than a factory made is worthy.

Excellent knife!

Beautiful, hand Forged in Japan, knife at a great price. 3-day delivery to California. The only flaw I see is that the tip is not sharpened to a needlepoint. That I can fix myself. But other than that, excellent experience with Burrfection.

Good w drawbacks

Overall I like this knife and would recommend.
There are drawbacks, but for the price it is worth it.
Pros: beautiful finish on blade. Simple but beautiful ebony handle. Sharp.
Cons: pretty decent scratches on both sides of sharpened surfaces of blade. Cutting edge surface of blade not the straightest surface. Spine also not super straight.
I do understand this is hand forged and at very competitive pricing. Overall it is worth it.
