Takeshi Saji R2/SG2 Diamond Damascus Kiritsuke with Ironwood Handle
Pickup currently unavailable
This Kiritsuke Gyuto is handcrafted by Echizen master blacksmith Takeshi Saji using R2/SG2 steel, heat-treated to 63 HRC. The blade features a diamond Damascus finish that extends to the grind in this beautiful suminagashi pattern, and is paired with a beautifully polished ironwood handle. The famous Saji quality when it comes to forging, heat-treatment and grinding, and the thinness behind the edge make this knife a superior cutting performer.

Care:
Wash and dry with a soft sponge, and safely store after use. Avoid cutting into bones, frozen foods, hard fruit pits.
Cutting Surface:
Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.
Sharpening:
We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives.
I like this knife very much and it does not disappoint - from the beautiful wood handle that fits so well in the hand to the mirror polished Diamond Damascus pattern that shines - the knife is eye-catching and everything about it screams quality and performance. Being a Saji knife, it is heavier than it looks but is perfectly balanced. The K-tip allows for greater precision when making fine cuts. Due to the diamond damascus mirrored finish, the knife glides through "sticky" food almost as good as a smooth finish blade. The knife was sharp out of the box (7/10) but a few passes on a tungsten carbide steel and a leather strop made the edge really keen. Another lovely knife that will be used with affection and delight and passed down. Thank you Takeshi Saji!
The knife was extremely well packed and arrived in 3 days (Hong Kong to Chicago). Having communicated via email with KT at Burrfection on a number of different topics, I am pleased to say that I am overall very satisfied - always had a quick response, with all my questions and concerns addressed. It is a pleasure to get a great product coupled with great service. Thank you KT and Burrfection!
What an incredible piece of art this knife is. Excellent cutting performance, and a high level of attention to detail. The diamond Damascus shines like a mirror, and the ironwood handle is very comfortable. Ten out of ten, out of the box sharpness, splitting hairs. Thank you Burrfection for the on time super quick international delivery, I will certainly be a returning customer.
