This handcrafted Kurosome Damascus gyuto by Yoshimi Kato is hand-forged with SG2 core steel, with 63-layer black-etched Damascus cladding. The distal tapering is amazing and the blade is thin behind-the-edge. The fit and finish of this knife are superior, with everything beautifully polished. The marble polished acrylic handle with purple marble pattern is beautifully fitted with mosaic pin decorations. Only One Available.

About Yoshimi Kato 加藤 義実
Yoshimi Kato (aka. Yoshimi Katou) is a renowned blacksmith in Echizen, Fukui Prefecture, and the 3rd generation Kato. Head of Kato Uchihamono, formerly known as Kintaro, Mr. Kato has apprenticed under his father - 2nd generation blacksmith - Hiroshi Kato for many years before taking over the family business. Mr. Kato is a master of heat-treating high-end steels such as SG2 and Aogami Super. His hand-forged Damascus is mesmerizing and his tsuchime finish aesthetically pleasing. Kato knives have a great reputation for being the finest example of Echizen craftsmanship.
Care:
Wash and dry with a soft sponge, and safely store after use. Avoid cutting into bones, frozen foods, hard fruit pits.
Cutting Surface:
Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.
Sharpening:
We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives.
This knife combines art, beauty, quality and practicality in one enticing package. It is eye-catching and a conversation starter. The damascus steel pattern is very well-defined, fine and intricate - one of the more beautiful and clean patterns I've seen. The dark finish and silver grey pattern contrasts nicely with the purple swirls of the handle. The quality of the workmanship is high - no sharp corners, tight edges, nice taper, smooth choil. The fit and finish is excellent. The knife is well-balanced (especially so for those that use a pinch grip) and fairly light weight. The knife was sharp out-of-the-box (8 out of 10) - a few passes over a tungsten steel honing rod and a leather strop made it very sharp. The damascus finish of the knife is not as "sticky" when cutting certain types of food as other damascus knives can be, which was a pleasant surprise. The knife feels very controllable and maneuverable in the hand and cuts well. A concern is when sharpening, one needs to be extra careful not to scratch or mark the finish, although this will inevitably happen if one uses it. This knife is a masterpiece and will not be just put away for show, but will be gently used with respect, and treasured and handed down. Expensive purchase but no regrets.
