Unlike a typical Damascus knife which has a Hagane (core) and Jigane (cladding), this Kiritsuke Petty knife has a monosteel structure, with dozens of layers of VG10 and VG2 steel folded together to create the stunning Damascus finish. This Kiritsuke Petty knife is a true laser. With the spine thickness measuring just 1.8mm at heel, the ultra-thin behind the edge ensures excellent smoothness in cutting. The handle is made of Micarta, a very durable material that provides excellent water resistant capabilities.

Care:
Wash and dry with a soft sponge, and safely store after use. Avoid cutting into bones, frozen foods, hard fruit pits.
Cutting Surface:
Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.
Sharpening:
We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives.
This knife is an incredible piece of art and a beautiful tool. It is razor sharp and very nice to hold. The fit and finish is very good. I would highly recommend this petty for a gorgeous every day culinary masterpiece. The etching of the logo is slightly raised so it does have a little texture in that spot.
