The Handiest Kitchen Chopper

I purchased a Tojiro DP VG10 37-Layer Damascus 180mm Chuka Bocho three years ago. It came sharp enough to cut paper, and it is easy to keep a sharp edge with a Japanese whetstone. I like the 1000 grit for it. The keen edge makes it a natural for making salads or chopping any vegetables, even slicing tomatoes. The handle is not large, but this allows for a good grip, and easy maneuvering for a variety of tasks. The handle measures 4", which is similar to many knives. I have occasionally used the Chuka Boco to chop some bone from chicken, but I do not think VG10 steel would be my choice if just chopping bone is my primary purpose for the Chuka Boco. That said, I have never chipped the blade thus far.
I love this kitchen tool so well that I keep one in my kitchen, and I use it all the time. It is light weight and very handy. Moreover, I bought all my children one this year for Christmas.
