Naniwa P-320 Professional Stone #2000
Pickup currently unavailable
The Naniwa P-320 Professional (Chosera) #2000 Stone is an interesting whetstone. It can serve as a starting whetstone for weekly sharpening, or as a daily sharpener. It is a great whetstone for experienced sharpeners who prefer a finer sharpening whetstone to start their sessions with. It can also be used as a final stone for knives made of softer steel, as those blades may not retain sharpness well at finer grit.
Ryky recommends skipping this #2000 stone if you already own the 800, 1K, or 3K stone, since it would overlap too closely with those grit levels.
#2000 is niche grit, but when paired properly with other grit ranges, such as 500/600, 5K and 8K/10K, it can give your knives a cleaner and sharper edge, than just a standard 1K + 5K/6K whetstone combo.

How to use:
This is a non-soaking whetstone, but it can absorb a lot of water on the surface during the first use, so 1-2 minute soak will aid when first using the whetstone. Afterwards simply apply water on the surface. Rinse and wipe dry with a hand towel when done, and allow air dry at room temp. Do not leave in water.
How to clean:
If the stone’s performance is slowing down, or seems to be diminishing, you can clean using a rust eraser, nagura stone, dressing stone, or a flattening plate. Be sure to clean the entire surface of the whetstone when using any of these methods to ensure even wear of the whetstone’s surface.
What a nice stone! About an inch thick - will last "forever".
The shipping was super-quick (2-3 days), it arrived in perfect condition in a slick "Burrfection" box.
I hadn't thought i needed a 2000 grit - but was having trouble moving from 1200 Atoma (diamond) to 5000 Shapton on super-hard knives.
This stone fills the gap nicely and cuts quickly, leaving the edge a bit shiny.
The smooth feel of the material makes it easier to keep the edges flat(ish).
