Perfection.

This knife really warms my heart. From the bottom of the handle to the tip of the edge everything is very well done. First i was a bit afraid of the comfortness of the handle because it got a really pronounced belly. But this was taken away the first time i was holding it in my hands. The handle is really beautiful, made of pakkawood with a mosaic pin and two, a gold and a red ring at the top and the bottom of the handle. The upper part comes in a highly polished tsuchime finish while the lower part went through kind of sandblast. With a 63 on the rockwell hardness this knife will stay sharp for a long time and is an absolute beast in professional kitchen. I highly recommend this knife to everyone who is looking for a sujihiki in the 200€ price range.
