This Gyuto in Miyabi's top-of-the-line Birchwood series is made of SG2 (MC63) steel core, clad in stainless steel with a sophisticated 100-layer Damascus finish. The Cryodur blade is heat-treated and ice-hardened using Miyabi's innovative technology to 63 HRC, offering superb edge retention. The fit and finish is superior, with a very smooth choil. The ergonomically designed D-shaped handle is made of Birchwood, and fitted with mosaic pins. Miyabi's Kanji character (雅) is engraved at the bottom of the handle.

Care:
Wash and dry with a soft sponge, and safely store after use. Avoid cutting into bones, frozen foods, hard fruit pits.
Cutting Surface:
Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.
Sharpening:
We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives.
This 240mm knife is a very nice and very sharp blade but the blade was not straight, it was bent in the middle and I had to bend it back to try and make it as straight as possable which I did in the end. For the workmanship, it not as good as you guy say.
After watching the YouTube videos on this knife you should have a very good idea of what to expect. This knife is stunning in person, super versatile and razor sharp out of the box. I would highly recommend being prepared to treat the handle with oil because I starts feeling dry and rough quite rapidly otherwise. I have no regrets buying this knife, I'm excited every time I get to use it.
The knife has a bit of defeat that I had to repair and that was the blade was not strate it was slightly bent which I had to bend it back to fix it.
