This is a Santoku knife from Mizuno Tanrenjo's "Akitada Hontanren" range - a relatively more affordable line compared to their Honyaki range. Hand-forged by 5th generation Mizuno master blacksmith Jun Mizuno, and sharpened by extremely experienced sharpener Tsutomu Minamiura, this santoku has superb grinds that are exceedingly smooth, with kasumi finishes. The overall grind and behind-the-edge are thin, enabling superb cutting smoothness. The Aogami blade benefits from Mizuno's outstanding heat treatment skills, ensuring superior edge retention.

About Mizuno Tanrenjo 水野鍛錬所 / Minamoto Akitada 源昭忠
Established in 1872, the Mizuno Tanrenjo workshop is one of the most prestigious blacksmith workshops in Japan. Five generations of Mizuno blacksmiths have worked on projects of cultural significance and won accolades for their craftsmanship. The works of 2nd generation blacksmith Masanori Mizuno still hangs on top of the pagoda at Japan's first UNESCO site, and the 3rd generation Akiharu Mizuno - a portage of Japan's national treasure blacksmith Teiichi Tsukiyama - has won a prestigious award for his honyaki yanagiba. The Mizuno family workshop has received two royal visits by Prince Mikasa of Japan, who is personally a fan of their craftsmanship. Today Mizuno Tanrenjo is led by 5th generation master blacksmith - Jun Mizuno (a.k.a. Noritada Mizuno) whose superior craftsmanship and extraordinary honyaki works have been recognized by two of Japan’s top Ichinomiyas (shrines) which have commissioned his katanas to become the shrines’ permanent collections.
Care:
Aogami #2 (Blue #2) steel is a premium Japanese high carbon steel for knife making. Despite some corrosion resistant quality (for a carbon steel), it is not stainless, therefore you should wipe your knife dry after each use. Patina will develop over time. Rust may develop if left in prolonged contact with water or acidic food. Use a rust eraser to clean if rusts develop. Avoid cutting into bones, frozen foods, hard fruit pits.
Cutting Surface:
Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.
Sharpening:
We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives.

I love its sharpness and its balance. The blade is fragile - expected - and I've had to sharpen it once as I made the mistake of cutting into a fork. It's really easy / responsive to sharpening. It's hard to go back to German knives when you own one like this.

I was a bit dissapointed when i felt the initial sharpness. But with a 1 minute session on one of Ryky strops it was Razorsharp and cut some unions like they where melted butter. The blade is amazingly thin. Fatastic knife!

I just received the knife. The feel of this knife in my small hands is great. It cuts perfectly. I have used it one time. It is well-balanced. I did not get any fatigue. The Service was amazing.

First I'm really pleased with the knife I purchased. Shipping to the United States took less than a week. The knife came packaged very well and is very sharp right out of the box. After an initial wash and dry I cut some vegetables and the knife surpassed my expectations. The knife felt good in my hand, and is lighter than I expected. It weighs 3.81 ounces / 108 grams and is very nimble and easy to control. After use I washed and dried again and applied a light coat of mineral oil to the blade and handle. The wooden handle absorbed the oil very quickly and turned a slight bit darker than when I received it. The fit and finish of the knife is superb and looks more like a work of art to me than a kitchen tool. I look forward to using it for many years.

An elegant design and beautifully made. It arrived razor sharp and carefully packaged in a presentation box (attention to detail is always on point with Burrfection). A lovely addition to the kitchen. It seems too nice to use, but if I take that approach to all of them, I’d never use any of these knives! It will be well used, but well looked after too. I look forward to my next purchase.
