This exquisite knife was created by Ryky in collaboration with the renowned martial artist Jet Li, and renowned Japanese blacksmith Yoshizawa-san. It is a unique knife that cannot be found elsewhere. Featuring a curved, tapered blade to accommodate western cooking styles, this 300-piece limited edition Gyuto is crafted using top quality Aogami Super steel. Each knife is hand crafted by the renowned Aomori knifemaker Nigara Hamono by Yoshizawa-san, and paired with a unique nautical blue acrylic western handle polished to the highest quality.

On the front of the blade, you can find Nigara Hamono's House Kamon and name, like all other Nigara knives. On the back of the blade, it's special "Ryky x Jet" logo with a unique individual limited number.

About Nigara Hamono 二唐刃物

With 350 years of history, starting from making swords for Tsugaru clan in the early Edo period, Nigara Hamono has passed down know-how and skills for eight generations. Its 5th generation blacksmith Kunitoshi Nigara was a legendary sword maker, earning a long list of accolades, honorary titles, and knighthood. The current (8th) generation blacksmith — Tsuyoshi Yoshizawa is supported by his father Toshiju Yoshizawa who has a keen interest in art and music. Nigara’s famous Anmon design is the result of Toshiju’s love for Andy Warhol’s artworks. The family business’ expansion into construction steelworks has given Nigara unmatched access to in-house know-how when it comes to advanced finishing. All these set Nigara apart as one of the most special knife makers in Japan.

Care:

Aogami Super (Blue Super) steel is considered the most superior Japanese high carbon steel for knife making. It is not stainless, therefore you must wipe your knife dry after each use, in particular the core steel not covered by the stainless cladding. Patina will develop over time, which will appear as “discoloration” on the cutting edge, but that is the nature of carbon steel - not a defect. The stainless cladding covers a large part of the blade, making maintenance easier but still preserving the cutting and sharpening pleasure of the Aogami Super core. Avoid cutting into bones, frozen foods, hard fruit pits.

Cutting Surface:

Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethylene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.

Sharpening:

We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives.

Beautiful and functional

Excellent quality. Fit and finish is better than any other knife in my collection. Comfortable in the hand for my larger hands. The geometry was different from a standard gyuto but easy to get use to. I like to collect Japanese chef knives and trade them around but I don't think I will ever let this one go. Well done Ryky!

One of my best knives yet. It's truly an art. When I opened it it truly took my breath away. The handle is such a beautyness. I prefer Wa handles but this is definitely an exception the contrast of the colors reminds me of when I used to draw stunning. The blade is superb, such a beautiful finish. I am surprised this beauty is not more money. Definitely worth every penny

Disappointed

The knife showed up with a bent tip. The edge of the blade was rusty and the handle has a rough imperfection of some sort. It appears the life was used and abused. I am so disappointed because the knife is otherwise beautiful. This is my 4th Nigera knife. I requested a return on the Burrificaion site and was ignored. I guess. I will have to go to my credit card company and request a refund I guess I will just have to use another online store from now on.
