As a top pick for Ryky, the Cerax 320 offers something few other coarse / fixing whetstone offers - great feel.  Most 320 whetstones offer speed, but are not pleasurable to use. This whetstone, is fast cutting enough to bring dull knives back to life, but does not make the user feel like they are simply grinding away material. It strikes a good balance between cutting speed, feedback, and speed of wear. Also available in thick version for frequent fixing whetstone users.

How to use:

Pre-soak for between 5-10 minutes before use, and apply water on surface during sharpening when needed.  Rinse and wipe dry with a hand towel when done, and allow air dry at room temp. Do not leave in water.

How to clean:

If the stone’s performance is slowing down, or seems to be diminishing, you can clean using a rust eraser, nagura stone (included), dressing stone, or a flattening plate. Be sure to clean the entire surface of the whetstone when using any of these methods to ensure even wear of the whetstone’s surface.

everything Ryky is saying on his videos are true

been practicing on cheaper stones and knives before I'll try using better stones and using it for more expensive knives and this stone was like night and day compared to those cheaper stones. Its so fast cutting so relaxing when being used you can feel what's happening to your knife and it cuts faster compared to cheaper coarse stone given that I even used softer steels on the cheaper stone than the one I used with the cerax 320

Good stone for dull knives

I keep the knives my wife uses less sharp than my chef knives and sometimes they get to the point where the naniwa pro 800 isn’t quite agressive enough to get a good burr quickly. I got this stone to fill in the gap, and it develops a burr VERY quickly. The feel isn’t as satisfyingly smooth as naniwa professional stones, but that’s to be expected on a low grit stone like this. I’ve used it on kitchen shears and to correct a bent tip on a bread knife that was dropped in the sink with good results too.
