Pure Art ...

Well, Customs to Europe cost me a liver, one arm and few toes ...

But in the end I am so happy with the knife ! :-)

I was afraid while reading comments about some Miyabi showed a bent blade ...
Nothing like that here : it is all perfect ;

I confess that was an impulse buy ; this knife is SO beautiful with the 100 layer damascus, and that birchwood handle !

I chose a stainless blade to use it for veggies ... but now I am NOT sure I will ever use it :
I don't want to damage such a beaut' ... :-)

The knife arrived in perfect condition, really razor sharp ... Scary !
I could only fell a VERY light burr under a finger ... and I just removed it honing the blade few times ... on a cardboard :-)

Would you have retailers, or a store in Europe, I would certainly keep the collection growing ...

Balanced and sharp

I went from a JA Henckels Pro S Santoku to the Miyabi. I have their slicing knife and it has worked well cutting fish. The Santoku has cut very well and I like the larger wooden grip. Father also compared it to his shun and he likes it more.
