Beautiful but...

Absolutely beautiful knife but I was a little disappointed at the fit and finish on such an expensive knife.

Good: Smooth rounded polished spine and choil. Mirror-like polish, hammered Tsuchime looks great. Handle is high quality.

Not so good: Out of the box sharpness is average, can slice cut paper but not push cut. There is a scratch on the mirror part of the blade that wont buff out. There is a scratch on the horn bolster looks like its from hitting the bolster on whetstone while sharpening. Glue is coming loose from the handle where the bolster meets the blade, im worried water will get in and cause rust. For some reason, the signature on the blade is not exactly what is stated in the picture and description (missing Echizen).

Kurosaki sg2

I have been using carbon steel knives and surprise by how good the sg2 performed. Have heard good things about it before hand but still surprised by it. And the design are just stunning. But only concerns is when it is time to come that I have to thin my knives, which probably be quite a few years away.

I LOVE THIS BEAST!!!

This is my 3rd knife from Burrfection so far and I am very pleased with the service and prices on this store.

The knife has great polished edges.
The handle extremely comfortable.
The edge is very sharp.
The weight of the knife is well balanced.
Laser Thin and cuts like a dream.

Overall it is an amazing knife, completing my small collection. And definitely a great performer.

The Yu Kurosaki Senko Gyuto was hand-sharpened before it left the workshop in Japan, and a lot of knifemakers opt not to sharpen their blades to the extreme - they rather leave it to the users themselves to decide how sharp they want their knives be.
Yu Kurosaki knives made after April 1st, 2021 do not have the Kanji characters “越前” (Echizen) engraved. The product descriptions and photos on the product listing have since been updated to provide an even better representation of the knife.

Meet or Exceeded All Expectations

Knife delivered quickly, in great condition.

Absolutely love the finish on this knife. The stainless Senko pattern really makes the knife pop. The balance on the blade is perfect. As someone coming from Western style, I was a little afraid on the handle size being thinner than my typical preference. However, after a week of heavy use to familiarize myself with the blade, I was really surprised at the comfort in my hand even after an hour of cutting one day. I also have enjoyed how easy its been to keep clean. Outside of edge retention, which I have not owned or used enough to fully test, I can say this is a fantastic knife that met or exceeded all expectations.
